SImple Chicken Salad Sandwich

Fresh, easy, and packed with protein, this is the BEST chicken salad sandwich!!

Equipment

  • Slow Cooker
  • Hand mixer
  • Large mixing bowl

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/2 cup chicken broth
  • 1 1/2 - 2 cups Greek yogurt (2%)
  • 3 tbsp fresh lime juice
  • salt and pepper to taste
  • 4 croissants
  • 8 leaves romaine or leaf lettuce

Instructions

  • Place chicken breasts in the slow cooker and sprinkle with salt and pepper. Add chicken broth, cover and cook on low for about 4-6 hours.
  • When chicken is done, drain cooking liquid. Using a hand mixer, shred chicken in the crock pot. Remove from crock pot and allow to cool slightly.
  • In a large bowl. combine Greek yogurt, salt, pepper, and lime juice. Add chicken and mix well.
  • Transfer to a covered dish and chill in the refrigerator for at least 6 hours or overnight.
  • Place a generous scoop of chicken salad on a croissant. Top with lettuce and serve.

Notes

Want to save time? Use store bought rotisserie chicken.
No hand mixer? No problem. Use two forks to shred the chicken. It will fall apart easily when cooked.
This simple chicken salad is also delicious on wheat bread or in a big salad.
Feel free to add more lime juice.
