Light and Fluffy Belgian Waffles - Nut Free & Delicious

Ingredients

  • 2 cups all purpose flour
  • 2/3 cups granulated sugar
  • 3 1/2 tsp baking powder
  • 2 large eggs whites and yolks separated
  • 1 1/2 cups whole milk
  • 1 cup salted butter melted and cooled
  • 2 tsp pure vanilla extract
  • For garnish: sliced fresh strawberries sliced bananas, whipped cream, powdered sugar, chocolate chips, sprinkles, maple syrup

Instructions

  • In a bowl, whisk together the flour, sugar, and baking powder.
  • In another bowl, lightly beat the egg yolks with a whisk. Add the milk, melted butter, and vanilla to the yolks. Mix well until combined.
  • Stir yolk mixture into the flour mixture with a rubber spatula, just until combined.
  • Using an electric mixer, beat the egg whites in a separate bowl until stiff peaks form.
  • Use a rubber spatula to gently fold the stiff egg whites into the waffle batter, just until combined. Do not over mix.
  • Let batter rest 20 minutes while you preheat the waffle iron.
  • Cook waffles in heated waffle iron until waffles are golden brown.
  • Serve with fresh strawberries, bananas, powdered sugar, whipped cream, chocolate chips, sprinkle and/or maple syrup.
