Key Lime Pie Muffins

Ingredients

Key Lime Muffins

  • 2 cups white whole wheat flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1/3 cup GreeK yogurt
  • 2 eggs lightly beaten
  • 2 tsp vanilla
  • ½ cup vegetable oil
  • 1 teaspoon Key lime zest substitute lime zest if you can't find Key limes
  • ½ cup fresh-squeezed Key lime juice

Key Lime Glaze

  • ½ cup confectioners' sugar
  • 2 - 3 tablespoons Key lime juice
  • 1 teaspoon Key lime zest

Instructions

Key Lime Muffins

  • Preheat oven to 375 degrees F. Grease a 12 cup muffin pan or line with paper liners and set aside.
  • Mix together the flour, salt, sugar ,and baking powder into a large bowl. In a separate bowl combine the Greek yogurt, eggs, olive oil, vanilla, zest and juice. Add to the flour mixture.
  • Stir lightly with a fork just until moist, batter will be lumpy. Spoon into muffin cups, filling each cup about ½ full.
  • Bake at 375 degrees F for 16-20 minutes or until golden and a toothpick inserted into the center comes out clean.
  • Remove muffins from pan to wire rack to cool. Once cool, glaze with Key lime glaze.

Key Lime Glaze

  • In a bowl combine confectioners sugar, key lime juice and key lime zest. Drizzle over cooled muffins.
