Easy Homemade Soft Pretzel Bites (Bread Machine)

A delicious snack that's easy to make with the help of your bread maker .

Ingredients

  • 2 1/4 cups warm water 70 to 80°F + 1 - 2 tbsp
  • 1 tbsp melted butter slightly cooled
  • 4 1/2 cups all-purpose flour
  • 4 tbsp brown sugar
  • 1 tsp salt
  • 2 1/4 tsp active dry yeast
  • 10 cups water
  • 1/2 cup baking soda
  • Coarse salt
  • Melted butter optional

Instructions

  • In bread machine pan, place 2 1/4 cups warm water, 1 tbsp melted butter, 4 1/2 all purpose flours, 4 tbsp brown sugar, 1 teaspoon salt, and 2 1/4 teaspoons of yeast in order suggested by manufacturer.
  • Select dough setting. Check dough after 5 minutes of mixing. Add 1 to 2 tablespoons water or flour if needed.
  • When cycle is completed, turn dough onto a lightly floured surface. Divide dough into eight balls. Roll each into a 16-in. rope. Use a pizza cutter or sharp knife to cut each rope into 2 inch bites.
  • Preheat oven to 425 degrees F.
  • Using a large pot, bring 10 cups water and baking soda to a boil. Working in batches, drop pretzel bites into boiling water. You don't want to crowd the pot. Boil for 10-15 seconds. Remove with a tongs; drain on paper towels and sprinkle with salt.
  • Transfer pretzel bites to a pan coated with parchment paper and sprayed with olive oil or nonstick cooking spray.
  • Bake at 425°F for 8-10 minutes or until golden brown.
  • If desired, brush with melted butter and sprinkle with additional salt.

Notes

Pretzels can be covered and refrigerated for up to 24 hours after boiling and before baking.
Store leftover pretzels in the refrigerator and heat in a 350 degree oven.
No bread maker? No problem. Use these modifications.
Start by dissolving the yeast in the warm water and allow to sit for about 5 minutes until water is bubbly. Then add the flour, brown sugar, and salt to the bowl of stand mixer fitted with the dough attachment or place in a large bowl and mix with a wooden spoon. Add melted butter and water/.yeast mixture and stir until combined.
Turn dough out onto a floured work surface. Knead the dough for 3 minutes and shape into a ball. Cover lightly with a towel and allow to rest for 10-30 minutes. 
Shape the dough into bites as directed above and follow boiling and baking directions.
