Chocolate Chip Snowball Cookies

Ingredients

  • 1 cup butter softened
  • 1 cup confectioners sugar, divided divided
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 2 1/4 cups all-purpose f!our
  • 1 cup mini dark chocolate chips

Instructions

  • Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
  • Beat together 1 cup softened butter and 1/2 cup confectioners' sugar.
  • Add 2 teaspoons vanilla, 1/2 teaspoon salt and 2 1/4 cups all purpose f!our. Mix until dough comes together.
  • Stir in 1 cup dark chocolate chips.
  • Roll dough into one inch balls and place on parchment-lined baking sheet.
  • Bake for 8-12 minutes, just until cookies are lightly browned.
  • Allow to cool slightly, and then roll in remaining powdered sugar. If you want the cookies to be whiter, repeat.

Notes

Store covered in airtight container for up to 1 week.
Can be frozen. Simply reroll in confectioners sugar after you defrost at room temperature.
