Gourmet Ghoulish Grilled Cheese
Grilled cheese is the perfect dinner. You’ll never convince me otherwise. And when it comes to Halloween, these gourmet ghoulish grilled cheese sandwiches are the perfect spooky post trick-or-treat dinner.

Gourmet ghoulish grilled cheese is easy to make. All you really need is bread, cheese, and some basic condiments. It comes together quickly and cooks up in just minutes.
But the end result is an ooey-gooey, melty delicious dinner that punches way above it’s weight. The addition of mustard or mayo and combination of complex cheeses is what gives this ghoulish grilled cheese its gourmet flavor.
How to make gourmet ghoulish grilled cheese:
My favorite way to make ghoulish grilled cheese (or any grilled cheese for that matter) is on an electric griddle. I love that you can cook a bunch of sandwiches at one time and the heat is consistent across the griddle, which makes for evenly toasted sandwiches that are a pretty golden brown. If you have an electric griddle, this is a great recipe to use it for. Plus it in and turn it to 375 degrees. While the griddle heats up, you can prepare you sandwiches.
If you don’t have an electric griddle, no worries. Just heat a non-stick skillet over medium-hight heat.
Pick a hearty, but soft white bread. You need to be able to cut it with your cookie cutters (metal ones work best), without it crumbling. I like to slice my bread into ½-¾ inch slices. This helps the bread maintain its shape, but makes a manageable sandwich.
Once your’ve sliced your brad, use your ghost cookie cutters to cut out shapes. Try this one from Amazon.
Once the ghost are cut, flip one of them over. Now you have both of your insides facing up. Spread dijon mustard or a good quality mayo on the inside of both slices of bread. This step is optional. If you have littles who don’t like complex flavors, you can go ahead and skip it. But I always use a good dijon mustard. Be aware, though, that you will taste the mustard once the grilled cheese is complete, so don’t try to sneak it in.
Then, top the bottom slice of bread with 3 slices of cheese, I prefer to use one slice of Swiss, one of cheddar, and one of muenster. But feel free to use just one kind of cheese or swap any of the cheeses for your favorite varieties. Add the top piece of bread.
Spread softened butter on both the bottom and top of the sandwich. I usually pop my butter into the microwave for 10-20 seconds so it is nice and soft, but not completely melted.
Finally, grill your ghoulish grilled cheese over medium-high heat until the bottom is lightly-toasted and cheese is beginning to melt. Flip and continue cooking until the other side is lightly browned and cheese is melty.

Ghoulish grilled cheese is best served immediately. That’s one of the reasons I like to make it on the griddle, because you can make 8-10 sandwiches at once. (Ghoulish grilled cheese sandwiches are pretty little.)

Instructions
- Heat a nonstick griddle to 375 degrees or place a non-stick skillet over medium-hight heat.

- Use ghost cookie cutters to cut out shapes.
- Spread dijon mustard or mayo on the inside of both slices of bread, if desired. I always use mustard.
- Top the bottom slice with 3 slices of cheese, 1 each of Swiss, cheddar, and muenster. (Feel free to swap cheese for your favorite varieties.) Add the top piece of bread.
