Easy White Chocolate Raspberry Latte

I love coffee. Like I mean really love coffee. I start thinking about my first cup of the morning the afternoon before. (Sadly, I can’t drink coffee after about 3 pm or I’m up all night). Most of the time I drink a dark roast coffee black, or with a splash of cream. But sometimes I want something fancy. That’s where my fake lattes come in. And this easy white chocolate raspberry latte is one of my favorites.

It’s also perfect for Valentine’s Day! And it would be great for Christmas too. Although, it’s really delicious any time of the year.

I started making these “lattes” years ago, long before we had a Nespresso machine or a milk frother. So I came up with a few tweaks to simulate the latte experience even without the proper equipment. Tha’s why I call these fake lattes.

Now we have all the kitchen appliances necessary to create real lattes, and we do make them from time to time. Usually my daughter makes them. But if I want a “latte” on a Wednesday morning I’m more likely to do it like this.

So, you all you need is a coffee maker and blender to enjoy this fancy white chocolate raspberry latte at home. It has a lot less sugar and it costs a heck of a lot less than your favorite coffee chain.

How to Make a White Chocolate Raspberry Latte

A couple of shortcuts make this white chocolate raspberry latte easy to make.

I start with 4-6 ounces of strong coffee. How much coffee depends on how strong it is. We have a Keurig and a Nespresso. I know these are not everyone’s favorite machines and you are certainly entitled to your opinion. For now, the work for us.

When I created this recipe I brewed a cup of Starbucks French Roast or Italian Roast in my Keurig on the small setting. Now I usually use a medium size dark espresso pod for the Nespresso. Strong French press or drip coffee are fine too. You just want between 4-6 ounces.

Pour the hot coffee into your blender. Yep – that’s the secret process for making an easy, foamy, coffee that tastes and feels like a latte.

Add about 8 ounces of milk. You can use whole or skim or whatever milk you have at home. I usually use 2%. Want to try a non-dairy milk, go for it! I have made this white chocolate raspberry latte with soy milk, but I’m sure almond milk would be fine too.

You can add the milk straight from the fridge, but I like to heat it in the microwave for about 40 seconds. Yes, the microwave. I told you this was an easy recipe. Would your rather put it on the stove? Go ahead. Heat it in a s mall sauce pan. Just keep an eye on it so it doesn’t boil and make a mess.

Then add 1 tablespoon collagen powder. This addition both makes the coffee extra creamy and is good for you. Collagen is great for your hair, nails, joints, and overall health. Read more about the health benefits of collagen here. Of course, collagen is not vegetarian, so feel free to omit it if you want a vegetarian or vegan friendly drink. You could try adding a plant-based unflavored protein powder if you want the extra protein boost, but I haven’t tried this. So let me know if it works for you.

Then add 2 teaspoons of raspberry jam. If you have heated the milk, you can just add the jam to the blender. The hot coffee and milk will warm it enough to evenly distribute. I usually put mine in the microwave for about ten second to make it liquidy so it is easier to blend.

Finally, add 1-2 tablespoons of white chocolate syrup. I use this one. I don’t like my drinks too sweet, so I usually use one and sometimes I drizzle a little extra on top.

Top with a dollop of whipped cream and sprinkles. Sprinkles are optional.

Enjoy!

You can enjoy a white chocolate raspberry latte in the morning or as a lovely afternoon snack. It’s perfect all on its own.

Or try it was a croissant. There is nothing better than a fresh from the oven croissant.

If you prefer to enjoy a white chocolate raspberry with dessert, it makes a lovely after dinner drink. Because the drink is lightly sweetened it can be dessert. Or you can serve it with something simple like butter cookies or something slightly bitter like flourless chocolate cake.

And, if you are enjoying this latte after noon, you can sub a splash of Chambord for the raspberry jam for a tasty adult white chocolate raspberry latte.

White Chocolate Raspberry Latte

This easy to make white chocolate raspberry latte makes it easy to enjoy a coffee shop treat at home–no fancy equipment required.

Ingredients

  • 4-6 ounces strong coffee
  • 8-10 ounces warm milk of choice
  • 1 scoop collagen
  • 2 teaspoons seedless raspberry jam
  • 1-2 tablespoons white chocolate syrup
  • whipped cream optional’
  • sprinkles optional

Instructions

  • Brew coffee and add 4-6 ounces to a blender.
  • Add 8-10 ounces of warm milk to the blender.
  • Add 1 scoop collagen if desired, 2 teaspoons raspberry jam, and 1-2 tablespoons of white chocolate syrup.
  • Vent the blender hood. Do not close blender tightly or the hot liquid will make it explode
  • Blend on high for 30 seconds.
  • Pour into a mug and top with whipped cream and sprinkles.

Notes

If you have an espresso machine, 4 ounces of espresso can be subbed for the strong coffee. You can also froth the milk with the espresso machine or a separate milk frother . If you prefer this method, add the collagen (if desired), raspberry jam, and white chocolate syrup to the coffee before adding the milk. Top with whipped cream and sprinkles if desired.
Want to make it a boozy coffee? Sub 1 ounce of Chambord for the raspberry jam. You can also sub Godiva White Chocolate liqueur for the white chocolate syrup.
