Easy Belgian Waffles

One of my favorite things about Disney World is the Mickey Waffles. Okay, maybe that’s a slight exaggeration, but I do love those waffles. They are light and fluffy and so delicious. How they manage to mass produce such a delicious waffle in what’s essentially a food court kitchen is beyond me. Or rather it was, until I came up with this easy Belgian waffle recipe.

All you really need is a Belgian waffle maker. This batter make the perfect light, fluffy, easy Belgian waffles. And they are so delicious.

Why You’ll Love Them:

Belgian waffles are the perfect breakfast food. The batter only takes a few second to whip up. It’s made with pantry staples. And the waffle maker does all the work in this easy Belgian waffles recipe.

Let’s talk for one minute about kitchen gadgets. There’s a lot of debate about what you really need to stock a kitchen. Lots of people argue for kitchen minimalism. They say you shouldn’t have any gadgets that don’t have more than one purpose. Which always makes me ask, what about a can opener? Another popular piece of advice is to get rid of all duplicates. I’m sorry, but I have about five wooden spoons and two sets of measuring cups, and on Sundays, they are ALL dirty.

When it comes to small appliances, the minimalists say you don’t need any (except maybe a coffee pot). Some pots and pans are all you need.

I freely admit I have a few small appliances. But I use them all. Some of them daily, like my Kitchen Aid mixer, food processor, and blender. Some of them weekly, like my bread maker and slow cookers. (Yes, I have more than one. My daughter is a vegetarian so I am often cooking two variations of the same dish). And some, only, occasionally, like the ice-cream maker (but homemade ice-cream is soooo good) and my waffle maker.

Of course, I cook and bake all the time and test recipes for a blog. So what I “need” is maybe more than what you need.

That said, I know not everyone has a waffle maker. If you don’t have a Belgian waffle maker, you’ll probably want to skip this recipe. (Although if you Google “can you make waffles without a waffle maker” you’ll get a lot of results. Like this recipe on Delish, which uses a grill pan to make waffles and this one on Bigger Bolder Baking, which calls for a special waffle pan. (At which point I’d probably just use get the waffle maker). I’ve never done this. So f you try this technique, please let me know in the comments.

Anyway, if you do have a waffle maker, this is mine – I love it because I can make two waffles in half the time – you’ll love this Easy Belgian waffles recipe.

How to Make Easy Belgian Waffles:

The key to making Belgian waffles light and fluffy is separating your eggs and whipping the egg whites. So before I even get started I like to melt the butter and let it cool. And then separate the eggs.

In a large bowl, whisk together the flour, sugar, and baking powder.

In another bowl, lightly beat the egg yolks. I usually use a whisk for this. Then, add the milk, melted and cooled butter, and vanilla to the yolks. Mix until well combined.

Then fold this yolk mixture into the flour mixture with a rubber spatula. Mix until combined.

Then, using an electric mixer, beat the egg whites in a separate bowl. Beat for 5-7 minutes, until stiff peaks form. Using a rubber spatula, gently fold the stiff egg whites into the waffle batter. You just want all the whites to be incorporate. Do not over mix.

Let batter rest for 20-30 minutes while you preheat the waffle iron. Don’t skip the rest time. It’s crucial to getting the airiness and crispiness that make the easy Belgian waffles so delicious. You wind up with a thicker, fuller waffle when you let the batter rest. You can even let the batter rest overnight. This saves time in the morning. Just be sure to pop it in the refrigerator.

Cook the waffles in heated Belgian waffle iron until waffles are golden brown. Some people like to spray the waffle iron with cooking spray. This really just depends on your preference and waffle maker. The waffles should pop right out when they are done.

I love how many ways there are to enjoy these easy Belgian waffles. You can serve them with fresh strawberries, or any berries really. We also love them with sliced bananas. Top them with powdered sugar, whipped cream, chocolate chips, and/or maple syrup. And sprinkles make them so much fun. Try rainbow sprinkles for a birthday or holiday sprinkles for an easy nod to the season.

Easy Belgian waffles are perfect for Sunday brunch. Of course, I don’t know about you, but our weekend are often as busy as our weekdays. So we also love to enjoy them for dinner. Add a yogurt parfait and you’ve got a quick and easy meal.

You can make a big batch of Easy Belgian waffles in advance and keep them warm in a 200 degree oven. You can also store leftovers in the refrigerator and pop them in the toaster for the best toaster waffles you’ve ever had.

Ingredients

  • 2 cups all purpose flour
  • 2/3 cups granulated sugar
  • 3 1/2 tsp baking powder
  • 2 large eggs whites and yolks separated
  • 1 1/2 cups whole milk
  • 1 cup salted butter melted and cooled
  • 2 tsp pure vanilla extract
  • For garnish: sliced fresh strawberries sliced bananas, whipped cream, powdered sugar, chocolate chips, sprinkles, maple syrup

Instructions

  • In a bowl, whisk together the flour, sugar, and baking powder.
  • In another bowl, lightly beat the egg yolks with a whisk. Add the milk, melted butter, and vanilla to the yolks. Mix well until combined.
