Key Lime Pie Muffins
Key Lime Muffins makes me think of tropical vacations.
We had the best Frozen Key Lime Pie on our honeymoon. It was our first night there. There restaurant was on the beach. The sun was setting over the ocean. And the Key Lime Pie was incredible. Sometimes I still dream about the pie, twenty-two years later.
I’ve tried a lot of Key Lime Pie over the years, and while it’s almost always good, it honest come close to that pie. So I decided that rather than be constantly disappointed with less than perfect pie, I’d figure out another way to enjoy a one of my favorite flavor combinations. And these Key Lime Muffins were born.
Even though I can’t jet off to the Cayman Islands anytime I want to (yet), I can make these delicious Key Lime Muffins for a taste of the tropics.

These best thing about Key Lime Pie is the unexpected combination of sweet and sour. And these Key Limeey Lime M Muffins get that flavor just right. They are delicious, light, and tangy. And they taste like a tropical vacation.
Key Lime Muffins are less traditional than Lemon Poppy Seed, Blueberry, or Orange Cranberry, but they deserve their spot in your muffin rotation. The citrus flavor is fresh and bright.
And muffins are easy to make. They take less than thirty minutes from first stir to done. In fact, they are the perfect snack when you are craving something sweet and your pantry is bare.
A note about the limes . . . I make this recipe with Key Limes. I can usually find them in the grocery store. Key Limes are yellow when ripe. They may be green when you buy them in the grocery store. And, technically you can use them that way. But their flavor mellows and gets sweeter with time. So, if you can find ripe Key Limes that is the way to go.
You can substitute regular limes, but you might also want to increase the sugar by 1/4 cup. But please do use fresh lime zest and juice. Whatever you do, don’t use that lime concentrate that comes in the lim-shaped bottle. Yuck! If for some reason you do need to substitute a bottled juice try Santa Cruz, or another juice that has only one ingredient: lime juice.
How to Make Key Lime Muffins
Start by zesting and squeezing your limes. Don’t forget to zest them first. Take it from me, it’s hard to get zest from a lime that has already been cut and squeezed. Set aside
Then preheat the oven to 375 degrees and line a muffin tin with paper liners. Try green for fun.
In a large bowl, whisk together flour, salt, sugar, and baking powder until well combined. In a separate bowl mix together Greek yogurt, eggs, olive oil, vanilla, zest and juice.
Add the wet mixture to the flour mixture. Stir lightly just until combined. The batter will be lumpy, but that’s okay. Don’t over mix or your muffins will be tough.
Use an ice cream scoop to fill muffin cups about halfway with batter. Bake at 375 degrees F for 16-20 minutes until golden brown and a toothpick inserted into the center comes out clean. Remove muffins from pan to wire rack to cool.
While the muffins cools, mix up your glaze. In a medium bowl, combine lime juice, lime zest, and confectioners sugar. Drizzle over cooled Key Lime Muffins.

These muffins make a green light breakfast or a nice accompaniment to brunch. I also love to pack them in lunch boxes or enjoy them as a snack.
In fact, these Key Lime Muffins are so delicious you can even serve them as dessert. Add a dollop of whipped cream or a scoop of vanilla ice-cream. Delicious!

Key Lime Muffins
- 2 cups white whole wheat flour
- 1 cup sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1/3 cup GreeK yogurt
- 2 eggs lightly beaten
- 2 tsp vanilla
- ½ cup vegetable oil
- 1 teaspoon Key lime zest substitute lime zest if you can’t find Key limes
- ½ cup fresh-squeezed Key lime juice
Key Lime Glaze
- ½ cup confectioners’ sugar
- 2 – 3 tablespoons Key lime juice
- 1 teaspoon Key lime zest
Instructions
Key Lime Muffins
- Preheat oven to 375 degrees F. Grease a 12 cup muffin pan or line with paper liners and set aside.
- Mix together the flour, salt, sugar ,and baking powder into a large bowl. In a separate bowl combine the Greek yogurt, eggs, olive oil, vanilla, zest and juice. Add to the flour mixture.
- Stir lightly with a fork just until moist, batter will be lumpy. Spoon into muffin cups, filling each cup about ½ full.
- Bake at 375 degrees F for 16-20 minutes or until golden and a toothpick inserted into the center comes out clean.
- Remove muffins from pan to wire rack to cool. Once cool, glaze with Key lime glaze.
Key Lime Glaze
- In a bowl combine confectioners sugar, key lime juice and key lime zest. Drizzle over cooled muffins.
