Nut Free Breakfast Parfait

Nut Free breakfast parfait with Greek yogurt and granola

One of my favorite foods Is Greek yogurt. It’s creamy, tangy, and delicious. I also love that you can use it in so many ways–like this ‘it only looks fancy” nut free breakfast parfait. Of course, you can eat it plain or drizzled with a little bit of honey, add to recipes in place of milk, top a baked potato or taco, or even make savory dips like tzatziki or spinach dip.

Why You’ll Love It

This nut free breakfast parfait is the best way to start your day. It’s a nutritionally-balanced and satisfying breakfast. The Greek yogurt packs a lot of protein to help keep you full until lunch. The fruit helps you get in your recommended servings of fruit and veggies, and since we are using fresh fruit you don’t have to worry about any added sugars. The granola brings in whole grains for sustained energy.

It only takes a couple of minutes to throw this dish together. It’s super simple, which makes it great for busy weekday morning. Especially if you’ve already pre-washed the fruit. But it’s also fancy enough for a holiday brunch or special occasion. I love adding some Greek yogurt and a variety of toppings to the breakfast table for people who prefer to eat a little lighter in the morning.

This nut free breakfast parfait is also the perfect thing to serve at a slumber party. Picking a nut free granola ensures its a safe option for everyone. I’d put together breakfast parfait bar with a variety of fruits and granola options. I’d add some honey and maple syrups and allow everyone to create their own unique breakfast parfaits. (I’d also probably add a bunch of fun toppings like chocolate chips, sprinkles, and maybe even some jelly or whipped cream.)

How to Make Nut Free Breakfast Parfaits:

Nut free breakfast parfaits are so easy I kind of feel silly writing out directions for this recipe.

Scoop your Greek yogurt into a bowl. I prefer 2% plain Greek yogurt. I don’t like the fat-free stuff. It has no flavor and the mouth feel is just off. I like the thick and creamy texture of the 2%. You could totally do full fat Greek yogurt too if you wanted to. I don’t hesitate to buy the higher fat version if that’s all that is available. I don’t taste that much of a difference though, so I usually go with 2%.

If you really want to use fat free, that’s fine. But try not to be afraid of fat. For a lot of years I tried to subsist on fat-free everything. Nothing tasted good and I was always hungry. Now, I almost always choose the option with fat. It tastes so much better. And a 2014 study actually suggests that full fat dairy may reduce obesity risk.

You could also use a flavored yogurt if you wanted to. Vanilla, strawberry, or preach could all form a nice basis for a nut free breakfast parfait. But beware, most flavored varieties are going to contain a lot more sugar or artificial sweeteners.

Once you’ve got your yogurt, it’s time to add your fruits. I love bananas and berries in my yogurt. Raspberries, strawberries, blueberries, blackberries. They are all delicious! But you could certainly add peaches or nectarines, cherries (be sure to pit them first), pineapple. Pineapple and some shredded coconut would be delicious.

The part that makes these nut free breakfast parfaits special is the granola. Nut free granola can be tough to find. I used to make it myself. (And homemade granola is delicious. I’ll share a recipe here soon). But then I found Safe & Fair. Safe & Fair granola has transformed by nut free breakfast parfait! It comes in a variety of flavors, including special seasonal flavors. My favorites are the Birthday Cake and Full Stack. They both are versatile enough to work with a variety of fruits, but have a little extra something. Although, you really can’t go wrong with any of the flavors.

The last step is to add a little sweetener. I usually pick honey or pure maple syrup, for some natural sweetness. And then you are ready to eat.

Enjoy!

Nut free breakfast parfaits are perfect for breakfast. They also make a great snack to take on the go.

If you can’t find the fruits you want in season, feel free to substitute frozen fruit for fresh. I often make breakfast parfaits with frozen berries or frozen cherries (bonus, they are already pitted).

Happy Eating!
