Sometimes the simplest things really are the best. Like fresh, local tomatoes. And perfectly ripe avocados. And a delicious savory cream cheese, all topping fresh, crusty bread. That’s what I had on hand when I decided to created this Tomato and Avocado Sandwiches with Everything But the Bagel Cream Cheese.

It definitely feels like summer is winding down here. The days are getting noticeably shorter. And even though temps are warm, okay hot, during the day, the evening cools down significantly. But our farmer’s market is still full of beautiful, ripe produce. And I just couldn’t help myself from bringing home all the tomotoes.

Then I had to figure out creative ways to use them up. First world problems, I know. I wanted to let the tomatoes shine, so I made lots of salads and bruschetta. Then I found some perfectly ripe avocados (a rare find these days) and had the brilliant idea to pair them with my fresh tomatoes and favorite garlicky cream cheese.

You’ll love how easy these Tomato And Avocado Sandwiches are to make. And their simplicity lets the freshness of the flavors shine.

But they look so darn pretty. I’d happily serve Tomato and Avocado sandwiches at a luncheon. The complimentary colors pop, and they re festive and fun.

Not to mention delicious. And I don’t know about you, but I feel like I need to store up on all my fresh produce eating to prepare for the long winter coming up way too fast.

How to Make Tomato and Avocado Sandwiches:

Start with some of your favorite crusty bread. These photos show a whole grain sourdough. But these Tomato and Avocado Sandwiches would also be delicious on my Ciabatta Bread. Cut nice thick slices so the bread can stand up to the weight of the cream cheese and veggies.

Then smear some Everything But the Bagel Cream Cheese on the bread. Don’t be shy. Make sure you put on a nice thick layer.

Top the cream cheese with tomato and avocado slices. Then sprinkle with some Everything But the Bagel Seasoning. You can also drizzle a little bit of olive oil on the top, too. I recommend a good quality olive oil, like Monini Premium Extra Virgin Olive Oil.

That’s all. Pretty simple. But so delicious.

The Tomato and Avocado Sandwiches are simple enough for every day but fancy enough for company.

Enjoy them for lunch or a quick and easy dinner. Lord knows I need quick and easy this time of year. Between practices and tennis matches and football games, and those shrinking daylight hours that make me ready for bed by 8:30, I don’t have a lot of time to fuss in the kitchen during the week. But Tomato and Avocado sandwiches make a satisfying dinner that the whole family can enjoy.

Of course, you mix up the veggies you put on top. Trade Everything But the Bagel Cream Cheese for plain, or omit the cream cheese altogether. Add a slice of cheese, maybe some fresh mozzarella, smoked gouda, or a nice, sharp, provolone.

You can serve them with a salad. Or not. It’s totally up to you. Juts promise me, you’ll give Tomato and Avocado Sandwiches a try soon.

Ingredients

  • 4 slices crusty bread
  • 1 ripe tomato, sliced
  • 1 ripe avocado, sliced
  • 4 ozs. Everything But the Bagel cream cheese
  • 1 tsp. Everything But the Bagel seasoning
  • 1 tbsp. olive oil optional

Instructions

  • Spread 1 ounce of Everything But the Bagel cream cheese on each slice of bread.
  • Top with tomatoes and avocado slices.
  • Sprinkle with Everything But the Bagel seasoning.
  • Drizzle with olive oil, if desired.
  • Serve immediately.
