Growing up, mashed potatoes were a dinner staple. We were very much a meat and potatoes kind of family. And, since I was never a big fan of meat, the potatoes were my favorite part.
But then I grew up and had to start making themself. And, can I tell you a secret? I hate peeling potatoes. So these creamy mashed redskin potatoes with garlic are my favorite mashed potato recipe.

They are super easy to make. You don’t even have to peel the potatoes first. Just cut them into bit size chunks. And you don’t have to pull out a mixer to whip them. Just a quick mash with your potato masher is perfect.
They go perfect with everything from roast beef to chicken dishes to fish. And, somehow, they seem fancy. Maybe it’s the little bit of red skin peeking through. But these creamy mashed redskin potatoes feel a lot more special than a bowl of regular old mashed potatoes.
How to Make Creamy Mashed Redskin Potatoes with Garlic:
This is pretty simple recipe . . .
Start with a five pound bag of red potatoes. Not the mini ones, just the regular size. Give them a good wash in cold water. You are going to be eating the skins, so you want to make sure they are clean.
Cut them into bit size chunks and add to a large pot. Cover with cold water and add some salt. Bring the water to a boil, then cover and reduce heat and let cook for about 30 minutes, until tender.
Drain the potatoes and set aside.
In the meantime, grate your garlic using a microplane. (Need a microplane? This one comes in tons of fun colors). Then heat whole milk and butter over low heat. Add garlic and continue cooking until steamy and fragrant, about 5 minutes.
Mash the potatoes using a potato masher. Add the garlic mixture and stir with a wooden spoon. Serve hot.

Creamy Mashed Redskin Potatoes with Garlic

- 5 lbs. red skin potatoes
- 1/2 cup unsalted butter
- 1 tbsp grated garlic, about 5 cloves
- 3/4 cup milk, I used 2%
- 1 tbsp + 1 tsp salt, divided -(1 tsp for salting water, 1 tbsp for mixing in potatoes
- 1 teaspoon cracked black pepper
Instructions
- Scrub the potatoes clean, cut into quarters and put them in a large pot. Fill the pot with cold water to completely cover the potatoes. Add 1 teaspoons of salt and bring the water to a boil.
- Cook, uncovered, until fork-tender, about 15-20 minutes. Watch to make sure the potatoes don’t boil over.
- Drain the potatoes.
- While the potatoes are cooking, heat the garlic, butter, and whole milk on low heat until steamy and fragrant, about 5 minutes.
- Using a potato masher, mash the potatoes until your desired consistency. You can also use a hand mixer for creamier potatoes. Gently mix in the warm creamy garlic butter, 2 teaspoon salt, and pepper until fully combined.
- Serve hot.
